Ramos Gin Fizz

Doing a complete 180 from the last couple drink posts, I've gone from two very simple drinks to one of the most complicated and finicky. The Ramos Gin Fizz is worth the work though, and tastes like a super delicious gin creamsicle. I've made this drink several times now and still sometimes the foam doesn't turn out for me.

Ingredients

  • 60 ml gin
  • 15 ml lemon juice
  • 15 ml lime juice
  • 30 ml simple syrup
  • 3 dashes orange flower water
  • 2-3 drops vanilla extract
  • 30 ml heavy cream
  • 1 large egg white
  • 60 ml soda water
  • Glass: Collins

Instructions

Add all ingredients except egg white and soda water to a shaker.

Shake with a small amount of ice (4-6 cubes) for at least 20 seconds.

Double strain out the ice, and add the egg white.

Dry shake without ice for at least 40 seconds.

Pour into a chilled(!) collins glass.

Let sit for at least one minute to let the foam set.

Slowly pour soda water into the centre of the foam until it rises above the rim.
